Apple Cilantro Lime Salsa

***This was delicious! We made it the same day we served it - but it was still good several days later. We didn't use poblano pepper - instead used a couple jalapeño peppers.

Ingredients
  • 2 cups red apples, chopped into tiny cubes
  • 1/2 cup red onion, chopped into tiny cubes
  • 1 poblano pepper, minced and seeded*
  • 1 jalapeño pepper, minced and seeded*
  • 4 tbsp fresh squeezed lime juice (you’ll need about 2 limes to get this much juice)
  • 1 tbsp fresh cilantro, chopped (plus more for garnish)
  • salt and pepper, to taste
  • tortilla chips


Directions
  1. Combine all ingredients together (except tortilla chips!) in a bowl and mix well. Taste-test and then add salt and pepper accordingly.
  2. Refrigerate for about 30 minutes before serving.
  3. Garnish with cilantro. This tastes best within a few hours after it’s made, but you can refrigerate it overnight if necessary.
